• 0,75 L full-cream milk
• 1 vanilla pod
• 8 egg yolks
• 150g caster sugar
• 40g brown sugar
Pour the milk into a saucepan.
Split the vanilla pod with a knife and scrape the seeds into the milk. Place over the heat until the milk reaches simmering point, then turn out the heat and leave to infuse for 15 min.
Whisk the egg yolks with the caster sugar until the mixture becomes light in colour. Add the warm milk, without whisking to avoid creating any froth.
Filter the milk though a strainer. Leave to rest, then remove any froth frome the surface.
Fill the dishes with the mixture and cook for 1 1/4 hours at 95°C (200°F).
Just before serving, sprinkle with brown sugar and caramelize immediately with a blowtorch.
